* 1-1/4 cup Lukewarm Water
* 2-1/4 teaspoon Active dry yeast
* 2 teaspoon Sugar
* 3 tablespoon Extra Virgin Olive Oil
* 1 teaspoon Salt
* 3 cups All Purpose Flour (Maida)
* 1 Green Bell Pepper (Capsicum) – chopped
* 1 Onion – chopped
* 10 Button mushrooms – washed well and chopped
* 2 Green Chillies – chopped
* 1/2 cup Del Monte Black Olives – sliced
* 1 cup Mozzarella cheese – grated
* 6 Tomatoes – cut into quarters
* 2 Onions – peeled and cut into big chunks
* 2 Green Chillies – slit
* 2 cloves Garlic – chopped
* 1/2 cup Homemade tomato puree
* 1/2 teaspoon Dried oregano
* 1/2 teaspoon Italian seasoning
* Salt – to taste

1. To begin with the Homemade Italian Calzones first, let’s start with making the dough.
2. In a large bowl, sprinkle the yeast along with the sugar.
3. Add the warm water and mix gently.
4. Cover and let it proof for about 5 minutes.
5. If the yeast is active and good, it will bubble and froth.
6. Now add the Del Monte olive oil, salt and 3 or more cups of flour.
7. Mix well to form a soft dough and knead for about 2 to 3 minutes.
