* 1 teaspoon Extra Virgin Olive Oil
* 1 Onion – finely chopped
* 2 cloves Garlic – finely chopped
* 1 Stalk Celery – finely chopped
* 1 Carrot (Gajjar) – diced small
* 1 Potato (Aloo) – peeled and diced small
* 200 grams Button mushrooms – quartered
* 1 Bay leaf (tej patta)
* 4 cups Vegetable stock
* Parsley leaves – for garnishing
* 1 teaspoon Whole Black Peppercorns – coarsely grounded
* Salt – to taste
* Red Chilli powder – to taste
